Updating last modified date is not something that WordPress allows by default. This plugin will provide a nice interface where last modified date and time can be changed. It can be applied to any custom post type.
Another useful option is a checkbox which prevents modified date to be updated for selected post. Starting from version 1.3.0 plugin supports new block editor.
